Recently for my birthday my hubby brought home flowers, attached to the flowers was a recipe for Blueberry Lemon Iced Tea. Now I love blueberries and I love my sweet tea, but I wasn’t sure about putting them together, especially since it also had lemon juice in it. This southern girl can not tolerate lemon in her tea! But I thought why not try it?
Oh my! It is delicious! It really doesn’t have a tea taste at all, it’s more like a lemony blueberry drink! I made it up in no time!
Here is the original recipe:
Juice from 2 lemons ( about 1/2cup )
1/4 – 3/4 cup sugar
3 family size cold-brew tea bags
4 cups water
Directions:
Combine blueberries, lemon juice and sugar in a pan over medium heat; bring to boil and cook for about five minutes, until berries start to break down. Strain in to a bowl using a fine-mesh strainer, pressing down on the solids to extract all the juice. Brew tea bags in water for about five minutes. Stir in blueberry-lemon juice mixture, and serve over ice.
Okay I did make a few adjustments, since I hardly ever follow directions exactly anyway! First I didn’t have fresh blueberries, so I used frozen. I also bought the wrong tea bags so I had to boil my water and used 5 regular tea bags and let sit in water for 5-8 minutes. I then mixed tea and blueberry mixture together in a quart container along with 2 hands full of ice cubes to the container. Mixed it all up until ice was melted then poured over ice.
For the sugar I used the 3/4 cup since I love my sweet tea, next time I will try using half honey half sugar. I typically do not like using all honey in my tea and I never use sugar substitutes. There are just some things a girl can’t mess with and since I usually don’t drink a lot of tea anyway I figured I am good. Everything in moderation ladies!!
